The development of natural preservative to preserve freshly prepared tomato sauce by replacing artificial preservative agents.

This invention is related to the development of natural preservative to preserve freshly prepared tomato sauce by replacing artificial preservative agents. Locally grown tomatoes were used and antimicrobial properties of cinnamon and nutmeg were used in this study.

This additive added tomato sauce samples stored at room temperature (around 30 ºC) were safe to consume up to 4 month of storage and samples stored at refrigerated temperature (8-10 ºC) were safe to consume up to 6 month of storage.
